Christmas Cookie Recipes







I’m cracking up because the other day when I was baking with Jake we started talking about my grandma’s recipes and her cooking… how we both miss it! We got to talking about how we literally never saw her ‘not fancied up’… even when she was baking a million cookies for the fam. Here I am, in the coziest cardigan on planet earth… A loosey goose henley, and the comfiest sneaker wedges. (Which all happen to be on major sale, might I add) Is it a generation thing?? Am I just lazy? Lol! What do you do your holiday baking in? I feel like my mom is the same way… always dressed up in a fancy Christmas sweater to bake some holiday cookies! Not I…. not I! Give me some good lounge wear and I can bake all day! I’m curious how y’all are?? Anyways, I’ll link up some of my JCP lounge wear that I love, as well as a few of my favorite small appliances from them- it looks like it is all on sale today! Yay!!


Since Christmas calories don’t count… I am going to share some of my favorite recipes with you guys!


Jelly Cookies

Ingredients:

3/4 cup of sugar

1 teaspoon of salt

3/4 cup of softened butter

2 egg YOLKS (reserve the whites)

1/2 teaspoon vanilla extract

1/2 teaspoon of almond extract

2 cups of flour

2 egg WHITES

1 1/2 of chopped almonds

1/2 cup of raspberry preserves


How to make them:

In a large bowl, combine sugar, salt, butter, egg YOLK, vanilla, and almond extract. Blend and medium spend for 1 minute. Then, lightly spoon in flour and blend mixture until completely mixed.

Roll dough into 1-inch balls. Dip dough into beaten egg WHITES, then crushed nuts. Repeat until all dough is used. Place on greased cookie sheet, 2 inches apart, make a deep depression in center of each cookie with finger tip (I use the end of a round spoon).

Bake at 350 for 10-13 minutes until firm to touch or lightly browned. DO NOT OVER BAKE. IMMEDIATELY remove from cookie sheet!!! While warm, fill center with a small drop of jelly preserves. This recipe makes about 3 to 4 dozen!


Swedish Nut Balls

Ingredients:

1 cup ground pecans

2 Tbsp sugar

1/2 cup of butter

1 cup of flour

1 tsp of vanilla

1/8 tsp of salt

Sugar for coating


How to make:

Combine all ingredients and mix well. Shape dough balls the size of walnuts. Place on an ungreased cookie sheet. Bake at 275 degrees F for about 30 minutes or until light brown. Roll in granulated sugar while hot and place on a cookie rack to cool.


Best Sugar Cookie Dough

Ingredients:

2 cups of butter

2 1/4 cups of sugar

2 tsp vanilla

4 eggs

6 cups of flour

1 1/2 tsp of salt

2 tsp baking powder


How to make:

Mix wet ingredients together in a large bowl. Mix dry ingredients together in a bowl. Mix the two bowls together, slowly, to create dough. Cover with plastic wrap tightly and chill in refrigerator overnight or at least 2-3 hours.

Roll and cut out cookie shapes, and bake on a cookie sheet for 10 minutes at 350 degrees F. Remove to a cookie cooling rack and cool completely before icing.
