This salad is one of Jake and I’s favorite for summer! SO delicious and has tons of veggies in it! I think it is perfect for families, couples, all the things!!
What you’ll need:
Salad:
- 2 chopped zucchini
- 2 chopped squash
- 1 chopped eggplant
- 1 chopped red onion- large
- 6 Italian sausage links
- 1 cup of cooked bow tie noodles (make more depending on how many people eating)
- 1/2 cup of shredded parmesan
Dressing:
- 1/2 cup of olive oil
- 1/3 cup of red wine vinegar
- 1 tablespoon of dried oregano
- 1 tablespoon of dried basil
- 1 teaspoon of minced garlic
Prep:
Throw chopped veggies into a grill grade veggie basket (if you don’t have a grill, I would use a skillet)- cook veggies until they are cooked or browned. While veggies are cooking, place sausage links on grill for15-20 minutes or until cooked fully through. Once veggies, pasta, and sausage are cooked, slice sausage into bite size pieces and place everything into one bowl. Pour dressing over mix and serve up!
