Katy’s Kale Soup

INGREDIENTS:

  • 2 large TBSP of butter
  • 2 lbs of Ground Italian sausage
  • I Yellow Onion (diced)
  • 3-4 Russet Potatoes (small cubes)
  • I cup of Half&Half
  • I large bunch of Fresh Kale (chopped)
  • I box of small shells (noodles)
  • 2 32oz Cartons of Chicken Broth
  • I TBSP of Minced Garlic
  • I tsp of Chili Flakes
  • I tsp of Onion Powder
  • I TBSP of Dried Basil
  • I TBSP of Dried Oregano
  • I tsp of Garlic Powder
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Brown the sausage in your pot.
  2. Add in diced onion/minced garlic & spices. Cook until fragrant.
  3. Pour in all liquids & stir.
  4. Add in potatoes, noodles & kale 30 min before serving.
  5. Serve with fresh grated parmesan cheese.
