Growing up we always had a “complete meal.” My mom was always big that you had to have your meat, vegetables, and a starch of some kind. So I guess that just stuck with me and I always have to have a few sides with our meals. This recipe below is so easy and one of our favorites.



Italian Squash
- 2 Zucchini
- 2 Squash
- 1 can of Diced Tomatoes
- 1 can of Spaghetti Sauce
- 1 tsp of Minced Garlic
- Salt & Pepper
- Mozzarella
Slice the veggies up and throw them in a skillet with a drizzle of olive oil and the minced garlic. When the veggies are tender add in the diced tomato and spaghetti sauce. Cook the mixture together for about 4-5 minutes. Season with salt/pepper and top with mozzarella.
Serve this side dish with grilled chicken or pork chops!

YES! I make a very similar recipe. I love all things zucchini and this is by far one of my favorite ways to make it. I swear, I thought I was the only person that ate it this way!
