Weekly Grocery Haul

  • Egg Roll in a Bowl
  • Texas Toast Personal Pizzas
  • Breakfast Casserole (who doesn’t love breakfast for dinner?!)
  • Taco Spaghetti

Egg Roll in a Bowl

  • 1 lb of Ground Turkey
  • 16 oz bag of Coleslaw
  • 1/2 cup of “Matchstick” shredded carrots
  • 2 Green Onions
  • 1 Sweet Onion
  • 2 tsp Minced Garlic
  • 1 tsp Ground Ginger
  • 1 Tbsp Hoisin Sauce
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Sesame Oil
  • 1/4 cup Low Sodium Soy Sauce
  • Salt & Pepper to taste

In a skillet, brown the ground turkey. Drain off the grease and return the meat to the skillet. Add in minced garlic, diced sweet onion, sesame oil, and rice vinegar. Cook until the onion is tender. Add in ginger, soy sauce, Hoisin sauce, coleslaw mix, and carrots to the mixture. Cook for about 5 more minutes or until the coleslaw is wilted. Remove the skillet from the heat and stir in green onions and salt and pepper to taste.

Serve with edamame or rice!


Texas Toast Personal Pizzas

  • 1-2 boxes of Texas Toast (depends on how many personal pizzas)
  • 1 jar of Pizza Sauce
  • 1 Package of Mozzarella
  • Pizza Toppings depending on what you like (pepperoni, sausage, mushrooms, peppers, jalapeños, onion, basil, garlic, spinach..)
  • Garlic Salt

Cook the Texas Toast on a baking sheet according to the directions on the package. Remove them from the oven and spoon some sauce over each one. Add on desired pizza toppings and cheese. Sprinkle with some garlic salt and stick them back in the oven for about 5 minutes.

Serve with a caesar salad! Such an easy weeknight meal.


Breakfast Casserole– (We love doing breakfast for dinner but this is obviously a great breakfast option too!)

  • 1 package of Croissant Rolls
  • 1 lb of Jimmy Dean Sausage (The maple one is really delicious!)
  • 5 Eggs
  • 1/2 cup of Milk
  • 1 package of Shredded Cheese
  • Salt & Pepper
  • 1/2 tsp Red Pepper Flakes
  • 1/3 tsp of Trader Joes’s Onion Salt (Optional)

Preheat the oven to 350 degrees. In a skillet, brown and grind up the breakfast sausage until cooked throughly. In a medium size bowl, whisk together 5 eggs, milk, salt & pepper, red pepper flakes, and onion salt (optional). Grease a 9×13 baking dish and line the bottom with the croissant dough. Pour the ground sausage (drained of grease) over the croissant dough and then pour in the egg mixture. Top with shredded cheese and bake in the oven for 35 minutes.

Serve with fruit or hash browns. I love to throw a scoop of salsa on top of the casserole slice for some added flavor!


Taco Spaghetti

  • 1 lb of Ground Beef
  • 8 oz of Spaghetti
  • 1 can of Rotel
  • 1 Tbsp of Tomato Paste
  • 1 packet of Taco Seasoning
  • 1 Roma Tomato
  • 1 bunch of Cilantro
  • Shredded Cheese

This whole recipe is made in one pan. Need I say more?!

In a large stock pot or dutch oven, cook the ground beef and drain the grease. In the same pot, stir in taco seasoning, Rotel, tomato paste, dried spaghetti noodles, and 3 cups of water. Bring the pot to a boil, reduce heat and cover the pot allowing pasta to simmer. Cook for about 13-16 minutes until the pasta is cooked through. Remove the pot from heat and stir in shredded cheese. Put the lid back on and allow the cheese for melt for 2-3 minutes. Garnish with cilantro and diced Roma tomato!
