Steak Tacos With Pineapple Pico

Ya’llllllllll- holy cow.. this meal was to die for!!!

Jake and I LOVE flank steak, so that’s why we chose flank steak…. because we love it…. that’s why we made steak tacos….. Okk you get it.. moving on- you are more than welcome to use a different kind of steak or even chicken! ALSO, I made my homemade salsa to go on the side and it was amazing…. (that recipe is by itself)!

Steak marinate:

• Flank steak (size depends on how many you are feeding)

• Half cup of olive oil

• 2 tablespoons of minced garlic

• Salt & Pepper to taste

• 3 tablespoons of the pineapple broth(saved from the pineapple can or juice from the actual pineapple)

Start this about 6 to 12 hours before the actually cooking process. I put it all in a ziplock bag & place in the fridge…. I take it OUT of the fridge about an hour before putting it on the grill which is a MUST!! You want to grill room temperature meat, NOT ice cold meat!

Pineapple Pico-

• 4-6 large cubes of pineapple- dice up

• Half of a red onion (chopped)

• 1/4 cup of chopped cilantro

• 1/4 cup of diced tomatoes (I use cherry tomatoes)

• 1/4 cup of diced orange pepper

• 2 limes

After everything is diced, throw in bowl and let sit while prepping dinner and grilling!

Meal Prep-

Put steak on grill and cook until preferred temperature. While steak is cooking, I put tortillas on the grill to heat & crisp. Once tortillas and steak are cooked- you can begin to prepare your tacos!! Jake puts cheese, sour cream and my salsa on his! SOO yummy!!
